With everyone jumping on the Whole30 band wagon, and trying to stick to their new years resolutions, I thought that I would post this unbelievable carrot fry recipe!! This bundle of goodness is so easy to make, takes no time at all, and is NOT fried!! Lately I have been reading so many blogs, articles, and listening to podcasts about the dangers of vegetable oil and canola oil. Since sweet potato and carrot fries are my ultimate favs when going out to a restaurant..you can imagine how much this news bummed me out as most restaurants use these to oils so frequently! I knew I needed to find a way to recreate my restaurant favorites at home, keeping it all natural, low cal, and full of ALLLLL the good fats! (Insert carrot fries here)
4 carrots- peeled and washed
1 tsp paprika
1 tablespoon avocado oil( I use Chosen Foods)
1 tsp thyme
pinch of salt and pepper
ice cold water( 1 cup)
1. Wash and peel your carrots( you can always sub sweet potatoes too!). Cut off both ends and then slice long wise( if you want skinny fries) and keep slicing until you have a thin quarter inch slices!
2. Quickly place the carrot slices into the ice cold water, and quickly take them out. Then place them on a baking sheet and drizzle the avocado oil, paprika, salt and pepper over them and gently toss together. Place in the oven at 425 degrees for 25 minutes( turning half way through)
**time in the oven may vary based off of your oven so the first time watch carefully so they don't burn!
Serve with Tessamaes Paleo No Sugar Ketchup and sprinkle with parsley for a beautiful finish!
