Italian Baked Eggs

Easy Morning breakfast that will look and taste like you spent hours in the kitchen creating this perfect and tasty delight!


1/2 head of cauliflower cut into florets

3 plum tomatoes

1 bunch of kale off of the stems

1 tablespoon of rosemary

1 tablespoon of oregano

3 fresh basil leaves

4 eggs

coconut oil


1. Take your cauliflower and tomatoes and roast in a frying pan with a teaspoon of coconut oil.  When the vegetables are tender add in the kale and spices. 

2. While everything is cooking in the pan, turn your oven to 350 degrees and allow to warm up. 

3. Back to your frying pan, make four wells around the pan, crack in your four eggs.  Place your pan in the oven for about 5 minutes until your egg whites are cooked through.  For a runnier egg yolk keep in for 4 minutes, for a semi-runny yolk keep in the oven for 5 minutes.  Keep an eye on this as you do not want to over cook your eggs!

4. Serve right from the pan to your plate and enjoy!
