Baked Egg and Steak Hash

This recipe is a sure thing any morning during the week or on the weekend!  One of my favorite things is having a nice warm breakfast in the morning, especially now that it is winter time!  The problem is always that I also am running around like a chicken with my head cut off in the mornings trying to get everything ready for the day and get myself out the door so I am not late for work.  That is where this simple and easy dish comes into play.  I can through everything into a pan, sauté for 5 minutes( my coffee drinking time) and then toss the eggs in and toss it into the oven to bake while I get ready!  So simple, so easy, SO delicious!

tir fry streak strips cut into bite size pieces( we always have stir fry at least once during the week)

any frozen or premade veggies ( my roasted vegetable recipe would be perfect!)

4 eggs( 2 per person)

avocado oil( or oil of your choice)

salt and pepper


place the steak and veggies into the pan and cook for a few minutes with the avocado oil.  After 5-6 minutes take off of the heat and let cool, preheat the oven to 325 and make wells in your veggies.  Crack the eggs and drop them into the wells.  Place in the oven and bake for 7 minutes( depending on how you like your eggs, longer for harder, shorter for runnier)
