Lemon Poppyseed Energy Balls

Summer is officially here!  The air is super pollen infused, the flowers are fully bloomed, and weekends are now spent by the water and completely outdoors!  Summertime has always been my favorite, especially when I was a teacher and you get two months to recuperate from that last year, and now with a dog we are always exploring new areas and enjoying the Boston area!

And the absolute best thing about summer are all of the lemon infused recipes!! I love a really good tart lemon recipe, something that is reminiscent of long summer nights and beach and the salt air. 

These lemon poppyseed energy balls truly take me back to my favorite memories...and it doesn't hurt that they taste exactly like the lemon pie bars from Larabar.

1/2 cup of cashews

1/8 cup pecans

1/4 cup of chia seeds ( the poppyseeds for this recipe)

1/4 cup of honey

5 dates that have been pitted ( medjool is preferable)

1/2 of a squeezed lemon

1 tablespoon of lemon zest

1. Place all ingredients into a food processor and pulse until a ball starts to form.

2. Take the blade out and roll into 1 inch balls.

3. refrigerate for up to 7 days
