Coconut Cashew Energy Balls

Nothing is easier than throwing a bunch of random yummy things into a blender and having these amazing little balls come out of that concoction! Most of the time that is how all of my energy ball recipes begin, taking out everything i am craving ( almond butter, coconut, chocolate chips..etc) and throwing them together for a quick on the go treat!

Tyler and I ( okay really just me buttt throwing him into this too!) love to have something sweet on hand for after dinner or when we are craving it, but my as my husband would say, I am super picky about what I eat and what I am willing to put into my body, mostly because I am of the belief that what you are eating translates to your energy levels, how your skin and hair look etc,. So our desserts and treats tend to be used with all cleaner ingredients and only naturally found sugar, such as dates, honey, or maple syrup ( in small amounts).

The BEST part about energy balls is that there is no wrong way to make them, as long as you have a sticky binding ingredient and ingredients you think would go well together, when you stick them into the food processor it does all the work and you are left with only a little ball rolling to accomplish this easy snack!

Ingredients:

1/4 cup cashews

10 dates ( without the pit)

3 tablespoons unsweetened shredded coconut

1 tablespoon chia seeds

1 tablespoon water

1 tablespoon flaxseed

Directions:

  1. throw all of the ingredients into a food processor and pulse until everything is mixed together and is a sticky mixture.

  2. Roll into 18 balls and put onto a baking sheet lined with parchment or wax paper. Throw it into the freezer to harden and keep there for as long as they last!

**Note: you can also roll the balls in more coconut shreds after you roll them all into balls if you would like!
