Roasted Vegetables

Nothing is better on a cold winters day, than avocado oil roasted winter vegetables!  Lately, all I have been craving is warm comfort foods, and brussel sprouts is on the top of my comfort food list! I was experimenting with a new crockpot whole chicken recipe ( coming to the blog soon!) and decided that we needed some beautiful veggies to go with the dish...insert winter roasted vegetables here!  You won't be disappointed with this amazing, delicious, and easy dish!

Ingredients:

1 pound Brussel sprouts cut and halved

2 sweet potatoes- skin one and quartered

1/2 butternut squash- quartered

1 bag of small colorful carrots

2 tablespoons avocado oil

pinch of salt and pepper

2 tablespoons of paprika

1 tablespoon garlic salt

Directions:

1. Preheat your oven to 400 degrees. 

2. Take your vegetables, wash and cut them into appropriate sizes.

3.  In a bowl combine the seasonings and oil.

4. Spread onto a foil lined baking sheet and bake for 35 minutes until crispy and tender at the same time!
