Nothing is better than a recipe that can be made and frozen, and also makes so much that you know you will get multiple meals out of it...insert this turkey meatball recipe here! These meatballs are packed with flavor and filled with good for your ingredients! Don't believe me...try it for yourself!
1 lb ground white meat turkey
1 lb ground white meat chicken
1 white onion
3 tablespoons minced garlic
1/4 cup coconut flour
1/4 cup almond flour
a pinch of salt and pepper
1 tablespoon chopped flat leaf parsley
1 tablespoon chopped oregano
1/4 cup nutritional yeast
1. In a sauté pan sweat the diced white onion, garlic, and olive oil. Once the white onion looks translucent, take off of the heat. While waiting pre heat the oven to 375
2. In a bowl mix together the chicken and turkey, add in the flours, parsley, oregano, salt and pepper. Mix together until evenly combined.
3. Add in the eggs, onion, and garlic, and nutritional yeast, using your hands to mix well
4. Now, my secret, take a 24 tin muffin pan and place tablespoons of the rolled meat mixture into each tin. Cook for 10-12 minutes or until the top is golden brown.
Repeat until all of the mixture has been used up. Freeze for up to 6 months or eat and enjoy throughout the week in salads, with spoodles, or simply as a quick on the go protein snack!
